Today, over 2 billion people worldwide suffer from micronutrients deficiencies. This book draws attention to a major global public health concern and defines the essentials of micronutrients and strategies to overcome micronutrient malnutrition. One innovative strategy that can cover large populations without significant increase in both the budget and effort is food fortification of staple foods like rice, wheat, salt, milk and edible oils. The pros and cons of this approach to manage micronutrient malnutrition are discussed.
